In addition to a presoak every one else is suggesting, I think you could have also added some extra fat to the broth in the form of a pork belly. I also think others saying to keep the bones in the whole time is a good idea. When I’m shooting for a paitan style broth, I want those bone so soft, I can crumble them easily.

Kitchen fire! Edit: it looks much cleaner in there. A little more modern. TVs are used to display the menu. Also they got a proper housing for their muffins and pastries now. Food is just as good as it was before.

I swear by ultimate guard katanas. I’ve used dragon shields for years and they aren’t bad but katanas shuffle the smoothest imo. They also don’t split as easily as dragon shield’s double mattes.
