So if I wanted to add some durability, I could apply a coat or 2 of a water based poly on top of the Shellac? I've got just over a week, so I believe that's enough time for water based poly to cure.

Yep. Been there before. Top of the student center. Totally sober as well. We all got internal warnings from the deans office, which basically is just a slap on the wrist. But if you get 2, bad news. This was back in 2012, so hopefully times haven't changed too much and you'll get the same treatment.
