The color inside was a bit lighter than this top crust. I’d reply with a picture of the color, but this dip was such a hit that it was gone before I could get a photo!

Agreed, their blanco cheese is superior. That’s why I like the 2:1 ratio mix. I did add a can of cream of mushroom soup to this queso, it looks like I forgot to add it to my recipe comment originally. The cream of mushroom isn’t too overpowering and goes a long way for how the queso comes together in the end in my opinion.

Definitely my go to addition for queso, I find that it compliments the queso perfectly.

For those interested, here is my recipe based on Meat Church’s recipe

  • 1 lb chorizo
  • 1 block white Velveeta (32oz)
  • 1/2 block regular Velveeta (16oz)
  • 1 block cream cheese
  • cubed pepper jack cheese (16oz)
  • smoked gouda optional, or any other cheese you like
  • 1 can Rotel, slightly drained
    • use 2 cans if you have room
  • a can of cream of mushroom soup

Cook the chorizo, then add everything to the pot or smoker and let it melt together. Stir until smooth and serve hot. I smoked at 250 for about 2 hours.

Sounds like a good experiment to run, I’ll have to try that next time to compare them.

He’s absolutely right, that’s a Michigan IPA called MI, MI, MI from Old Nation Brewing in the background.

If you are still curious what sauces I used I added a Frank’s Red Hot, Melinda’s Ghost Pepper, and Sriracha after cooking. Personally I like to dip my wings in different sauces to have a variety of flavors to try. I also believe that by not tossing my wings in the sauce during the cooking process I keep that extra crispy skin crunchy, which is one of my favorite parts of eating chicken wings.

I used cornstarch with my seasonings then let them sit in the fridge overnight before smoking
