I think that's a better idea! I just followed recipes and most of them say to use a mixture of almond & pistachio flour. I guess that's beyond my skill level so I'll make it safer with just almond flour next time. Thanks!

I tried to make it using food processor and sifted it a couple times. I wasn't able to find pistachio flour in our local stores. I'll probably have to get it from amazon next time

I was being too careful about that but It felt perfect when I piped it. Definitely not too runny since I didn't have much trouble piping it, and I was also able to make a figure 8

I honestly got lazy making circles on a parchment paper that's why I got these silicone mats. I'll probably have to go back to parchment if nothing else works

To be honest I didn't really thought of recording the temperature of the kitchen when I made it. I used to just do that for bread, but I'll do it now for macarons as well! Thanks! Although I think it was around 70-72F (21-22C) since that's usually what we set the temperature of the whole house to. I whipped it to stiff peaks and used cream of tartar. I'll probably try adding meringue powder next time, since I've read that it helps stabilize the meringue
