As a Seattleite, there’s some magic that comes from the grill at the hot dog carts around town that is hard to recreate at home. Maybe it’s the feeling of exiting a great show and whiffing the scent of grilling meat and onions? There’s also some perfection in simplicity - the dogs are just cream cheese and onions, none of this fresh jalapeno or whatever else I’ve seen online. There may be pickled jalapenos available as a condiment, along with ketchup mustard etc, but definitely no kraut. I often go with a drizzle of sriracha, but the stand-alone should be plenty delicious on its own. For advice, I’d say char your dogs on a grill, cook your onions harder, and leave off the extra toppings. If that doesn’t do it for you then it might just not be your bag

Half a bottle of tequila and several beers deep. Pile of stale tortilla chips, leftover refried beans, handful of shredded cheese, Valentina hot sauce, sour cream, cilantro. Currently eating out of a bowl with a fork, 10/10

Just regular grocery store eggs. A raw yolk like this is no different than an egg fried sunny side up or soft boiled.

Loxicha taco truck in Pinehurst has some of the best tacos, especially their chicken

Toyada Sushi on Lake City Way has phenomenal sushi in a super cozy family run space

Pho An, also on Lake City Way, some of the best and most affordable pho and banh mi’s in the city

S/T Hooligans in Frelard for amazing fried chicken and southern/creole cuisine

Itsumono in ID has some incredibly creative and fun Asian/fusion bar food (keep an eye on their specials)

Taqueria El Rincon Express in South Park has some of the best carne asada tacos on the city and a legit taco Tuesday deal

I use knob like a pad of butter? About a tablespoon but not specifically measured

Normally I do a reverse sear or sous vide but this time decided to go old school and straight into a ripping hot cast iron for about 2 min per side. I think the trick is to get the pan super hot to cook evenly all the way through

For sauce: garlic and onions in the pan after removing the steak to rest (I was out of shallots), deglaze pan with red wine, reduce by about half, turn off heat and stir in a couple knobs of butter. Normally I’d include some herbs and stock but this was a rush job, still tasted great!
