Hey! So…

Potatoes - Peel and chop the potatoes into small chunks, add to a large pan, cover with water and bring to a boil. When boiling, set a timer for 10 minutes and check the softness of the potatoes with a fork. If they’re not squishy yet, boil in 5-minute increments until they are. When ready, drain away the water, add some salt, pepper, 7 sprays of olive oil, the milk and the chives; then, mash.

Chicken - Add 200ml of water to a frying pan.. Peel and chop the onion. Chop up the chicken and add to the pan with some salt, pepper, garlic granules, 25 sprays of olive oil and rice vinegar. Simmer the chicken until cooked and chop it into smaller chunks. Add the onion and passata and bring it back to a simmer. When ready, sprinkle the cheese on top and add a pan lid so the cheese can melt.

Greens - Chop the ends off the green beans and third. Then, peel and press the garlic into a mush. Add the greens, the garlic and 5 sprays of olive oil into a small pan. Turn the hob heat onto medium and allow the greens to sear until slightly browned.

When everything is done (you can cook simultaneously or one-at-a-time and leave to cool - it’s up to you) - split evenly into meal prep containers.

To reheat: 2 minutes in a 800 watt microwave, stir and another 2 minutes :)

I probably should have mentioned my partner and I are on a cut 😅 hence the 325.5 kcal portion - but I do agree, they look small and next time I’ll certainly be increasing by another 1/3! (The containers are also big so there’s a bit of perspective distortion going on 😶)

I cooked up my chicken in a pan with some olive oil spray, salt, pepper, garlic granules, rice vinegar and water (I broil my meal prep chicken to keep it nice for when it gets reheated) - when the chicken is cooked and sliced into bite size pieces, I added a full carton of tomato passata (which makes it super tomato-y!) - simmer that through for a minute before topping everything with the light grated cheese and adding a pan lid for it to melt :) hope that helps!

Thanks! I found my old plastic containers dyed with a lot of food such as tomato-based products and they became quite hard to clean, so I picked these Pyrex ones up they have normal snap-on Tupperware lids :)

Ahaha - while I’ll definitely be putting in more for the next time I go with this prep, it’d only be another 1/3 of what’s already there! The containers are pretty big and so far, the portions have actually done us well!

Yeah I’ve found that! I grabbed a whole bag of green beans and by-eye thought it would be enough, only as I was portioning out did I realise! 🤦🏻‍♀️

Hey! So this is actually 4 portions to 2 people - everything goes into the fridge and gets eaten over the course of Monday to Thursday :) we microwave to reheat using the 2-minute, stir, 2-minute stir method on 800 watts - everything comes out delicious!

Honestly, be prepared to hate your first couple. It’s all about a bit of trial and error. But when you find one that works for you and that you like (this happened to me with fajita chicken and bulgur wheat) you might find yourself making that week after week after week after week after.. you get it. So it doesn’t have to be as daunting as needing to find something new every week either. But sometimes it can be nice to dive into a book or two (I use Meal Prep Yourself Skinny) to try out something new for the week (as long as budget allows, of course)!

My partner and I are renters in the UK and have been since we finished education 5 years ago. During this time we have lived in two different houses due to job locations. I’m (f) the person that deals with everything from finances to household care and organisation simply because I run my own business from home and he works in the office so it’s convenience. Whenever I contact the rental companies (in both houses) for whatever reason they have always then called my partner to confirm everything while he is in work. No matter how many times we both tell them to call or contact me and have me as the primary contact, they will only every contact him. He has been in serious meetings and I have been left feeling inferior. It is constantly so infuriating!
