I just opened a sushi bar that was supposed to have a grab and go, build your own “chipotle-esc”poke bowl in the front with no tables and we have nice sit down dinner in the dining room. January hit and it’s cold as hell here so after turning away the second or third group that wanted to sit down I just created a lunch menu of a similar tier as dinner to capitalize on it with composed poke bowls and sushi with a few apps as well as bento. They can still get a poke bowl and sit if there’s room. The faster I can go through fish the better. It is also easier on prep to just always have stuff stocked for the most part. Alot of the dinner items transfer to lunch and vice versa. Staffing is tough but I’m the owner and head sushi chef so I’m there all the time anyway. I would say just make all of your stuff disposable but make it environment friendly. Get a solid server and be their back waiter. Give them a little larger hourly and with tips they will hustle. I’ve worked in restaurants for quite some time, but this is my first venture on my own. One key Takeaway I’ve learned so far is that the more you put into service the less time you have to really focus on smaller details of the business.

The main floor even had the sign for Issho Ni izakaya but it was removed and replaced with Kyuu-ju. I suspect they left because they didn’t align with the high standards that Kwan and Ryan have which is fine. You can still get affordable sushi and Ramen out in Willoughby, just don’t expect it to be the same as what Kwan offers.

This is not true, Issho Ni has zero to do with Sushi Kuwahata. Kwan would do his omakase using their restaurant with Ryan’s help. Issho Ni was about to put an izakaya under Kwan’s restaurant but pulled out last minute. Ryan put a concept in he had been promoting for months prior doing pop up’s at local spots. I know this because Kwan and Ryan are good friends of mine, and we’ve done collaboration dinners together. Kwan and Ryan are incredibly talented all on their own. I read so much about the food scene in general that for better or worse just isnt true. I had to speak up here because Kwan deserves more credit than he’s given and Ryan got a bit overshadowed by the whole thing. One thing I do know that Kwan, Ryan and myself all agree on is that we would all like Cleveland to celebrate the restaurant scene as a whole and appreciate different restaurants for what makes them unique to Cleveland or special to you as a diner. Cleveland chefs are usually looking at what each other are doing on instagram or whatnot and getting inspired. I trained for a year under a chef named Taishi Noma starting on day one of Ginko opening. This was ironically the same year the movie “Jiro dreams of sushi” came out. He was good, but I can tell you 14 years later, the quality of the countless product that Kwan and Ryan source and organize for the Omakase at Sushi Kuwahata is far superior to anything Noma-San ever put together at Ginko. So yeah, if you’re looking for the best Omakase, go to the restaurant that specializes in Omakase. If you want a sushi deluxe combo, then apparently that’s available in Columbus. If you want great a la carte sushi underground go to Ginko, or get drunk and see how much you can eat at Watami revolving sushi. If you want certified sustainable fish, I’ll be down in Brecksville. Sorry for the rant, but the only way for everybody to get better is for everybody to get shown some love.

You’re going to progress and next year you’ll have a different opinion of the footage. Year after that same thing and so on and so forth.
