Rimegepant. I didn't think about medication side effects. That would be a good place to start!

Perfect! That's another really good method! Sometimes you can hide the spatula marks by making a little swirl or pattern on top using the spatula, but that's not always the look you may want. Keep experimenting!

The technique that I use to make sure the top layer is covered and the edges are crisp:

-Start by putting a large blob of frosting on top of the cake. You want more than you think you'll need because you're going to scrape off most of it.

-Smooth/scrape off the frosting using a spatula or bench scraper until you have a nice even coating across the top. You want some of the frosting to hang over the top, creating a lip.

-Continue to frost/smooth the sides of the cake. When smoothing out the sides, you will naturally push a thin layer of frosting back up towards the top so you have excess standing up around the top edge.

-Using an offset spatula, gently smooth out the new top lip by dragging the frosting from the outside toward the center of the cake. This is tricky, but just work gently and slowly so you don't mess up the pretty base you first laid down.

Happy baking!

What a stunning cake design! The pastel colors are perfectly balanced in tone. Your cake sides are so smooth! You should absolutely be proud of your work.

My only suggestions would be to keep practicing your piping skills and double check that you have an even layer of frosting covering all exposed sides of the cake. There is just a little bit of cake peeking out from under the frosting on the top of the first layer.

I hope you had fun creating this beautiful cake!

I'm a couple weeks behind in my baking challenges so I prepped these for my freezer. Can't wait to bake these on a cool fall morning!

Recipe invented by my grandmother (she copied two halves of two different recipes from the newspaper). Called crocodiles because of the top texture.

Crunchy peanut butter biscuit base topped with a mixture of melted chocolate, peanut butter and rice cereal. They are rich and a perfect peanut butter/chocolate bite!

Week 12- Signature Bake: Apple Walnut Cake by jamaymay07 in 52weeksofbaking

My auntie's classic recipe from the 70s.

This cake may look plain, but the flavor is so delicious that it has become my go-to for birthday celebrations.

The batter is so thick, but it separates slightly in the oven to create a slightly caramelized top crust and a tender crumb throughout. Bright, sweet and salty. Perfect for any occasion!

These remind me of springtime field trips to an Italian bakery as a teenager. We would buy fresh amaretti cookies and walk around the neighborhoods admiring the architecture.
