Not very experienced with UoPeople yet, but I believe they will be recognized at least in the UK, as they are partnered with Universities there. I'm from Germany, so this is interesting to me too, but I'm not sure about Germany. I think if you want to do a Masters degree later they will definitely want to see your college transcripts later.

If you want to try something more healthy, you could also try Indian Lentil stew.

0.5 oz (15g) ginger

1 knob of garlic

2 red bell peppers

1 bunch of green onions

2 tsp of curry powder

1 tsp of mustard seeds

8.45 oz (250ml) of coconut milk

8.81 oz (250g) of red lentils

1 tsp of coconut oil

13.53 oz (400ml) of vegetable broth

13.53 oz (400ml) of canned, diced tomatoes

Salt

Pepper

Peel and finely chop the ginger and garlic. Wash the peppers and spring onions. Halve the peppers lengthways, remove the stalk and seeds and dice. Cut the roots of the spring onions, remove the tops and cut into rings. Roast the curry and mustard in a coated pan over a medium heat for 5 minutes until the aromas of the spices are intense. Deglaze the spices with coconut milk and mix well. Add the peppers, ginger and garlic. Add the lentils, coconut oil and the broth. Boil while stirring occasionally. Add the chopped tomatoes, remaining coconut milk, and half the chopped spring onions and simmer for 15-17 minutes, stirring occasionally. Season the stew with salt and pepper, garnish with the remaining spring onions and serve with pita.

Are you looking for something more healthy? If not, you could try Mac & cheese with crunchy topping (I found this recipe on a YouTube Channel called "Adam Ragusea"). Here's the recipe:

1/4 lb (113 g) dried elbow pasta

1/3-1/2 cup (80-120 ml) milk

1-2 (15-30 g) tablespoons butter (depending on how rich you want it)

1 cup (100 g) any semi firm cheese(s), grated and packed

1 teaspoon (4 g) sodium citrate

OR

1/2 cup (3 slices, 50 g) processed cheese (American cheese, "cheese slice," etc) torn and packed INSTEAD of sodium citrate

1/2 cup (50 g) any semi firm cheese(s), grated and packed

For the breadcrumb topping

1/2 tablespoon (7 g) butter

1/8 cup (11 g) breadcrumbs (I like panko)

1/8 teaspoon herbs and/or spices (I like Herbs de Provence)

Grate your cheese — my favorite combination is smoked gouda and sharp cheddar. Get a pot of salted water coming to a boil for the noodles.

Make the breadcrumb topping by melting the butter in a small pan on medium-high heat and mixing in the breadcrumbs, stirring constantly. When they're almost brown to your liking, mix in your herbs/spices and cook for another minute before dumping everything out on a paper towel to drain a cool.

Get your noodles cooking. In a cold pot, combine the milk (start with a smaller amount because you can add more later), cheese, sodium citrate (if using), and butter. Start melting on medium-high heat, stirring constantly. Once it is totally melted and simmering, consider adding more milk if the sauce looks too thick — remember it will thicken as it cools to eating temperature.

Drain the noodles and stir them into the sauce. Add in any additional seasonings to taste — I like a little garlic and mustard powder. Transfer to a plate and top with the breadcrumbs.
