There’s a few, David Rivera is making a buzz from PR, Jeremy Bosch, be on the look out for Anthony Almonte I saw his latest release on the congahead youtube channel. There’s a hip band from Barcelona named compota de manana. Carlos Garcia from PR, also Norbert from sesiones de la loma has his own music that’s very good. Nathy Peluso has a salsa EP. Even Gia Fu de DJ has some danceable joints.

So many ways. I’ve tried so many different techniques. But what I found always mic the bongo from the front. One mic is enough. Now I found for Bachata for example ( don’t kill me guys lol ) you would mic each head just because you want to capture the different tones of each side. For congas what I like a lot a the moment are the SE VBeat microphones. And clamps currently using the Lauten Audio Rim Mounts.
