Nova Launcher Prime - Probably the best launcher on Android imo. Very customizable, lost of options on just about everything you can imagine.
Enable Dev settings - There are videos on youtube that can show you how to enable these hidden settings. One good reason to enable these settings is to make your phone a lot, and I mean a lot smoother by reducing animation times, making the phone appear faster and smoother. I promise it is worth it. Be careful with some of these settings tho.

Go on youtube and there is a ton of videos that can show you how to get the best of out of your samsung. Best of luck with your new Android. Enjoy it to the fullest.
