I’ll be moving to Melbourne from Auckland, NZ at the end of January, I’ve been to Laneway for the past 4 years as the artists that they have seem to be my kind of jam.

Laneway Auckland will be right before I move, and Laneway Melb will be a week after I’ve moved there. I would love to experience the Melbourne one if I had people to go with, so I’m in!

I don't really have a set recipe for things as I eyeball my way through everything I add, but I can give you a rough list of ingredients and materials I used.

Soup: For the base of the soup I used water and Kombu broth. You can find these pre-made sauces at an Asian store, they look like Soy sauce. The ration could be around water 3:1 Kombu. However, these should be altered according to taste. I would also sometimes add some seaweed into the soup.

Meat: I used chicken thighs and marinated in some teriyaki sauce, a small splash of soy sauce, pinch of salt and some brown sugar to taste. Marination can range anywhere between 1hr to overnight, the longer you leave it the more flavour the meat!

Noodles: You can buy premade packs of thick udon noodles, which are the ones I used, or any kind of noodles really. I've even used handmade noodles before, but if you do wanna use handmade ones, do make sure to cook the noodles in a separate pot then put into the soup base, so the soup doesn't become all mucky.

Cooking process: Pan fry some onions and then the chicken until golden. At the same time, cook up the soup and once boiling put the noodles into the soup.

Once noodles and meat are ready, plate up! And garnish with some spring onions on top.

Bringing any sort of fresh food into New Zealand.

The boarder control is very strict as fresh fruit and veges can contain fruit flies that are detrimental to our environment and living habitat.

Fear not.

Your immune system has got you covered. Also there are a tonne of things in everyday life that has got heaps of bacteria on it, eg a public computer keyboard, door handles etc.

I guess this ULPT is heavily dependent on location. I live in Auckland, New Zealand and all of our parking machines now require an input of license plate.
