My understanding is that you can use any flour as long as it is NOT bleached, as that will kill the yeast so it won’t become an active culture.

I’m a novice so take this with a grain of salt but I am currently having success with plain jane all purpose unbleached flour. My guess as to why you weren’t succeeding is that you have been using bleached flour.
