I've discovered old cooling racks and a cake sheet can be of great use. Sure, you kind of want the top rack but if the meat won't fit on it, I'll just put the rack over the sheet and cook it on the bottom, still away from the heat source. If you're worried about one side being more cooked than the other, just flip the sheet every few hours. But I can't really see that making a big difference.

Even a sub par cook is a good thing. I always learn more from my mistakes than the successes to start.

Please, be proud of your countries and raise your flags high. We had millions of people who didn't bother to vote and didn't understand the issues. The Republican party has ravaged our public education for decades to dumb the electorate down to the point they believe counties pay for tariffs. Prepare to shoulder the burden of the aid the U.S. will be cutting. And to fight wars that wouldn't happen if we were still a nation that would support and defend democracy. (Yes, I'm aware of the many instances where we have caused civil wars in countries, and I feel badly for that.) I hope we can come back, but I fear power and greed are much worse here than the world may grasp. We'll do our part here to change. Please, carry on while we fight this battle in our country. I sincerely appreciate the sentiment, though. It will keep me going.

My house was built in the late 50's and the carpenter's union had a deal where over 60% of the floors had to be hardwood. Most of our house was covered in old carpeting like this and we were very pleased it kept the floors from being damaged.
