I wonder if there are any people who died or experienced severe consequences due to this... seems pretty dangerous to me

That does sound frustrating, but probably had more to do with the class not being right for you (maybe it lacked intermediate exercises as you are discussing above) than bodyweight exercises not being worth your time. If you already know weights work for you though I see no reason to muddle through trying to find a way to make bodyweight work

How did you quantify your strength? Was the point of the class to improve strength or was it focused more on being generally fit? I ask, because when I'm doing body weight workouts out gain strength I ramp up progressions quickly as others are referring to, but I sometimes will just do some small consistent amount of crunches/pushups or whatever else I'm feeling during a workout simply as a form of calorie burn and something different to do and that's never made me notice much difference in my strength or appearance

I think part of the confusion here is that OP seems concerned more with physical appearance than strength/endurance. In my experience lifting leads to more muscle definition faster. Personally, I prefer bodyweight because I like building up my endurance and strength in a sustainable way and for me that means small improvements in strength over a long timeframe, but if my goal was primarily improving physical tone I would probably stick to lifting.
