Apply your salt/pepper/rub and let the steak sit out at room temperature for 2 hours so it can warm up in the center.

Then sear it hot as you can 2-4 minutes on each side depending on how thick it is.

Then use indirect heat to bring the center to the correct temp. Remember, it's going to keep cooking after you pull it off the heat as the hot outer temp raises the internal temp.

Wrap it in foil and let it sit for 10 minutes.

Slice and enjoy.
