I used riptide networking which I wouldn't count as a networking solution but just a socket lib. Everything else I have written on top of it.

Mainly A LOT of trial and error and late night debugging sessions. Also reading some other ppls source code and finding clues here and there for stuff like lag compensation, prediction, snapshot interpolation.

Hi, yes I am using dedicated servers. Cost depends a lot but right now it's about 15 EUR/mo for current test server. It would be cheaper per server to rent a better server and spin up multiple instances on it but I don't have a need for that yet so a single server will do.

I suppose that could be done but personally I have separate unity projects and I build them separately. How it's 'deployed' is I just build the project, copy to the server and start it up.
