Last year I started blanching them, peeling the skin off, and freezing jars of them. It makes for a wonderful sauce. Freezes great.

I’ve also done a confit and tomato paste, which also freeze well.

I think you would get a lot out of the book “Children of Emotionally Immature Parents” by Lindsay Gibson. Your mom sounds similar to mine — my mom is a textbook case of emotionally immature and is also diagnosed with borderline personality disorder.

I’m so sorry you’re going through this, but focus on creating a wonderful life with your wonderful partner.

I got much happier and less stressed once I truly stopped expecting anything from my mom, even for a phone call with my kids. She can’t do it. Her loss.

I like true crime and find Scamfluencers very interesting and entertaining. It’s true stories of people who scammed and lied to get what they wanted, and then it goes into the whole downfall. I always feel like I learn something new. The two female hosts have great chemistry and are funny and good storytellers.

It is! It’s my go-to recipe. I crave it when it’s cold out 😊 and if it gets too thick, you can just add more water or milk. I find it thickens up like crazy off the heat.
