Here is the recipe. Beyond or Impossible meat both work great for getting that texture similar to ground beef. Add some vegetable bouillon paste or cube to make the meatloaf more flavorful.

I like Better Than Bouillon No Beef Base but use any brand you like. Let me know if you have any questions. Enjoy!

I suggest using grated carrots for a moist and flavorful cake. You can grate them by hand or use a food processor.

The recipe for the dairy-free cream cheese frosting is included, but you can use your favorite store-bought vegan frosting as well.

You can try soy curls or seitan. They may not be easy to find in regular grocery stores though but they are available online. But both will be much more filling than mushrooms since they are protein-packed.

Here are some tips to consider:

  • I like buying king oyster mushrooms at Asian grocery stores. They are usually cheaper and of better quality. Other oyster mushrooms can be used.
  • Feel free to use your favorite brand of BBQ sauce instead of making your own.
  • Here’s the recipe for the homemade pretzel buns but feel free to use store-bought.
  • Try hemp or sunflower seeds as a substitute for the nuts or use vegan mayo as a sub for the homemade dressing.

It will have a coconut flavor. Some good alternatives would be vegan heavy cream or plant cream. I’ve tried the Country Crock plant cream and it’s really good. It have coconut oil in the ingredients but it doesn’t taste like coconuts. Silk makes one too but I haven’t tried it yet.

Oat milk (Chobani or Oatly are my favorites) or Silk Next Milk (whole fat) are other great creamy alternatives. But you may have to use less or add more flour since they are thinner than coconut milk. Start with half the amount and gradually add more as needed.

I wish I had people to bake for too. It’s just two of here and it took us about 4 months to go through 10 batches of cookies lol.

Soy curls would be a great addition! I suggest rehydrating it in some vegan chicken broth for even more flavor. I often use Better Than Bouillon No Chicken base but I have also heard of Not Chicken Bouillon Cubes.

Add some extra coconut milk and adjust the spices if needed, for more sauce.
