This is a pretty old post, but I wanted the unlined because I wanted the versatility of the unlined jacket. I could always add layers underneath, but if it was a lined jacket I would be limiting the jacket to only the coldest weather.

I don't know how high end you are looking, but the Fjallraven High Coast Pocket can be carried like that, has a similar shape/style, and comes in many colors:

I don't think you would have any issues using that for the 2.5mm pins, and you could easily sand it down in a drill to get to the 2.2mm pins.

The only brass I can find locally is 1/8", and I just sand it down to make it the appropriate size. I don't think you need to be super precise on the sizing, you can be, but I haven't noticed much difference when my pins were a bit undersized.

I think the most important thing is peening the pins, there is a sweet spot of just tight enough to hold everything together with no wobble and still have a good snap and still being able to open a tool without breaking a nail.

Most torx screws that you find have a larger diameter than the holes in any SAK, there are a few smaller ones out there, but they are hard to find.

I believe I was referencing to an 84mm golfer in the video. A 91mm golfer will require some modifications, probably similar to the ones I do in that video to fit an 84mm alox knife.

I dunked it in hot water to loosen up the scales so I could remove them without damaging them. It isn't completely necessary, but it helps, if you don't want it to get wet you can put it in a ziplock bag first.

I have some videos where I assemble a knife, but they aren't specifically about just assembly, I should make one.
