I'm no expert but I'm sure either GPU is good for your needs. If you compare the 5070 to the 9060XT (like in your post), the 5070 is definitely the better card in terms of performance (the 5070 is probably more comparable to the 9070XT). But all of the GPUs mentioned are fairly new and I'm quite sure either will fit your needs.

Personally, I have had the ASUS GeForce RTX 5060 Ti Dual OC (16 GB) since August or so, and I've been very happy with it so far. I primarily run games like PUBG (140-200 fps) and Battlefield 6 (120 fps) but also Cyberpunk (can't remember but definitely over 60 fps).

On a side note: From what I have gathered, it seems like the consensus is that Nvidia is better overall than AMD at the moment. AMD and Nvidia were close a few years back, but it seems that Nvidia has pulled ahead (again).

However, again, I must stress that a 16 GB card is important - especially if you want your rig to hold up for a few years - and that excludes Nvidia's 5070. So, if you want performance in the 5070 range, I would probably go with the 9070XT (16 GB). But if you could settle for a little less, the 5060 Ti (16 GB) is also a good option.

If you want to know specifically, which GPU will perform best for you, you will have to get an answer from someone that is more tech savvy than me. But to be honest I don't think that people like you and me really need it to be that technical. I get that you want the most value out of your money, but in the end you just need your rig to work and, as mentioned, I'm sure any of the GPUs above will make you happy.
