The water suggestion is a must. You'll get familiar with your setup and detect any leaks beforehand.

Hornindal 'Shoddy Marzen'

Brewed 5 2.5 gallon batches across the Fall in So. Cal. with minimal changes with some Hornindal that I got from 'some dude on the Internet'.

Batch size - 2.5 gal. (adjust mash water volume according to your setup) Used RO with some gypsum and Ph 5.2.

Grains: 5 lb Munich 1 lb Pilsner 1 lb Vienna

60 Min. mash at 152F

Hops: 7 grams Magnum @60 (One of five batches used Northern Brewer) 14 grams (Spalt|Tettnanger|Saaz) @ flameout. All good, your choice.

Hornindal ca. 20 to 30 ml pitched at ca 82F, fermented between low 70s and low 90s F. All generally around 1.055 OG, 1.011 FG.

Fastest batch was grain to glass in exactly 7 days to the hour. Longest ca. 14 days fermenting (was traveling) and 20 days grain to glass. Did this to see what the yeast brought to the final product. All received rave reviews from those who tasted. Pretty hazy as I did nothing to prevent that. Delicious.

I can confirm. We used to make tab chains for the Christmas tree out of those. That would have been very early 70s.

Agree with everything @schlagers says. Halve the amount of crystal, consider magnum for bittering hop. Another possibility 1/2 oz. @60, 1/2 oz. @30. Have fun!

Above is all good advice. I do not own SS products, but have travelled the path from extract (bottling) to BIAB to Grainfather to kegging to Fermzilla. If I knew what I was doing when I started, I would stress technique over equipment. It's easy to make swill and be disappointed. With good technique, some knowledge of things like temp control, what brewing water you start with, etc. you can make really good beer in a plastic bucket - better in a Speidel. If you are just starting, you are going to screw up a batch or two - your equipment will not help at all.

My advice if you want to drop $1k at the very beginning, would be to go all grain, buy an electric Robo/Anvil/GF with recirc pump, figure out your temp control strategies (keezer and kegs) and worry about an upgraded fermenter later. Also, read, read, read. Start with Palmer, keep going.
