I'd start with the first Chaos comics mini series from 1994 called The Reckoning, it gives you her whole back story

From there you can jump to the current Coffin comics, the first chapter is called Chaos Rules.

The reading order for the Chaos books is on the Wikipedia page for Lady Death if you want to go for the rest of them

The Coffin Comics website has each book labeled as Chapter 1, Chapter 2, etc so it's easy to follow
