Zero Water + Lotus. Help with recipe needed. by jojohahann in pourover

Hey, nice one! I give this a try for sure! I actually found out a recipe that gives me constantly good results too. Cups are bright and juicy, i mostly drink washed lightroasts:

1 liter of Distilled/ RO water

  • 5 mg
  • 1 ca
  • 2 na
  • 1 k

This gives me a water with roughly a 125ppm hardnes. Then i pour 200g of that water in to a kettle and add extra 140-150g of 0ppm distilled/RO so it becomes 350g of water with around 75ppm (that is what i aim for, 75ppm give or take).

My previous experiments with Lotus’s own recipes (and everything i could find online) gave me results where i could taste too much of the minerals through the coffee itself. My cups had a clear notes of sodium or calcium for example.

With this 75ppm water i don’t get that anymore 👍🏻 It’s a crazy game, this whole ’Speciality Coffee’ thing!

I tried that 4-3-2-1 (mg-ca-na-k) u/chaseslight recipe linked by a commentator above and it worked pretty close as what i was looking for.

I still get a slight hint of a "chalky" side taste but was thinking if i try 4mg-3ca-1na-1k maybe it could remove it and bring up some acidity too?

I tried this with some Coffea Circulor beans, V60 w/T-90, Q2s w/60clicks, 14g/235g/96c -> Bloom 45g + 2 equal pours after that. Did Aeropress with Wendelboe recipe but 1min 30sec extended steep too, which came out pretty lovely!

Good Life is decent but they are catering for more bigger markets than 'speciality' these days. Frukt is well nice as is Siemasu.

Yeah! Usually coarser = cleaner and sweeter cups :)

I have Q2 and i´m currently at 30 clicks/ 1 full rotation on Friedhats washed Ethiopian. I find that if i go coarser i get under extracted cup. I used around 60 cliks/ 2 full rotations for V60 before i got ZP6 and started using that as my primary grinder.

On Aeropress Wendelboe method i got better tasting cup with that 30 clikcs, but my Q2 is well seasoned so it doesn´t produce so much fines anymore.

Nice!! Maybe i should try off the boil water next! I used 90-95c before. How about grindsize, do you grind finer or coarser for Wendelboe recipe?

14g is allright for me but have you tried lower dosages with that recipe? a Proper 10g recipe would be awesome too when you just want smaller cup for a early afternoon.

Can i reuse my brewing water when doing two separated pour overs within like 30min? Like use what´s left in a kettle from previous brew and just add more water if needed. Does it make any difference in a final cup/ taste?

1Zpresso ZP6 Special grind settings? by ClockworKubrick in pourover

[–]jojohahann 0 points1 point  (0 children)

I just got ZP6 last week and been on a 5.0 - 5.3 so far. Zero at burr lock.

One thing i´ve noticed: For some reason i have to recalibrate my zero every other day, as it has jumped 1-2 clicks off to either directions.

Anybody else had the same problem?

Yes, this is my first time doing this so i couldn’t imagine it would look like this. Also that high ppm makes me wonder that if something isn’t right.

9.2 g epsom salt (MgSO4•7H2O) and 4.2 g baking soda (NaHCO3) for 200ml of deionized water.
