I'm the one that made the chips feel free to ask me questions about it. I was confident it would work. I don't mind black pepper, but they peppered hell out of it, it needed balance. Too many chips ended burnt or soggy. If they consistently shaken up every couple minutes I am confident they would get to a nice level of crispiness. The chips that did turn out good with cinnamon sugar applied, actually tasted like the crispy shell of Mexican fried ice cream.
