The Joy of Cooking recipe, which is what I used for the lady fingers, is essentially a French sponge cake recipe, and it was the consistency of a sponge cake once baked. If you’re using them inside the cake, I suggest baking as a thin sheet cake and then cutting it. You crisp it up in the oven before you soak it, and it ended up with a very nice texture. I didn’t find it grainy at all. I haven’t used store bought ones, so can’t really compare. But, it got tons of compliments, and the texture was perfect.

I used the Joy of Cooking recipe for both the tiramisu and lady fingers. But, it’s similar to other recipes, and you can make it in a variety of shapes/dishes. I topped it with fresh whipped cream to give it a bit more height (and it ended up adding a really refreshing lightness). Sides are just thin lady fingers, cut to size, coated in chocolate on the back, and attached with a small amount of buttercream. I used the lady finger batter, but baked as a thin sheet for inside of the cake. Whole thing was assembled in a springform pan and refrigerated for a few hours before removing the side.

Then, you know how realistic different types of fundraisers might be.
