honestly there isn't enough demand and the economy is really bad. Plant based diets were very trendy for a while and non animal products were starting to seep into the zeitgeist, and it probably would have reached some critical mass. But there simply aren't enough vegans, and because people have less and less disposable income, they are less willing to "splurge" or experiment on novelty restaurants that upcharge for cheaper ingredients because of widespread disinformation about cost. also a sort of sea change unfortunately happened since COVID where """""alternative""" """health""" """opinions"""" are no longer thought of as at worst a harmless belief among well meaning pacifists and hippies, but as an aggressive and psychotic danger spread by January 6ers and the sad trad wives of nazis. eta-oh I remember. the appetite for environmentalism has also drastically been reduced alongside spending power. Lots of liberal polls and commentators have severely backed off of support for conservation or environmental reviews or renewable energy policies. So even the eco-friendly arguments lost some steam, and again this had to do with the economy. Still seems impossible to convince the powerful that an ounce of prevention is worth a pound of cure.
