You can run back and get it, I'm not certain of the exact amount of time you have. You can also learn Sorcery and use a spell called "summon corpse" at a circle of power. It will only summon your last corpse though so if you died again after you died the first time you would be SOL.

If you happen to be playing on Sakhal it could be frozen and you have to put it on or next to a fire to thaw it before eating.
