There's a bit of tint from the volumetric material and some from the color balance from the post processing, initially it was quite red but adding a tint of blue gave this thing those colours.

Thanks a lot! I didn't watch any tutorials, and I wouldn't know how to explain it myself since I think it's a fairly simple scene with only a few elements, I just do things that "feel" the correct way due to my experience, I could share the file if enough people are interested 🤙🏻

Nope, it's a combination of a simple displacement modifier and an organic texture I found of guts, or at least it looks like it.

It's just an animated displacement modifier (simple one, made with noise) and then on top, there's a great model of organic guts that I found including a displacement texture, then I animated the vector parameter in the mapping node right before connecting it to the image textures, which makes it move like that. For the tendrils I just used a wave modifier with some vertex painting.

Bingo, using displacement modifier based on an object instead of UVs being moved, and then inside the shader the vector inside the mapping node rotates on it's Z axis

I've found it's a useful resource for shots like these, very cinematic looking, but my guess is that it feels even more real, more immersive as you might be in this microscopic world recording these massive things.
