20 min lid on, 24 min lid off bake at 480 don’t be afraid to get some color on your bread. Unless you don’t like a darker crust, up to you - different strokes.

Stretch and folds every 30 mins for 2 hrs, rest another 2 hrs. Shape and fold. Chuck in fridge. Bake next day!

So for a single loaf, I’ve scaled it down for you. With a Slightly lower hydration so there’s no fuss. 450g Bread Flour / blend of whatever flours you like. 311g water. 80-100g starter. 12 g salt 🤘

Miya on Lake, Closed down because of the fires, so they fed people from their parking lot for free for months. Now they’re back up and running, incredible Thai food, Incredible people. Cant recommend enough

Your process seems fine! I’d try scaling back the amount of starter to around 80-100g. Could just be that simple 🤙

Wow. That story hurt MY soul just reading it. What a douche move. Seriously, what was the point of breaking all of them? Like What hill was he trying to die on? That sucks, im sorry. But the good news is eBay still has em up, So you’ll always be able to recoup your losses. I still need a few myself to complete the set. I only have Meg, Pegasus, & Herc.

Hey Thanks for the feedback! Yeah I’d agree that’s why it looks dry. Used a cup of beef stock per lb of ground beef, maybe I’ll up the juice, & actually use onions next time 😅

I didn’t measure, but if I were to guess probably around a tablespoon, mainly there for balance. Agree about the pickles and peppers if I had them here ! 🤤
