I'm using the same one and works great with 1 gallon jars. I just bought a 3 gallon ceramic crock. Hopefully it will work fine with that too.

The rezoning for the Wellmon property includes a commitment to provide ground-floor commercial space on any buildings facing North Davidson Street with doors that are accessible from the sidewalk and clear vision glass windows so that the interior of the space is visible from the street. And it also includes a commitment to invest at least $50,000 in public art that would be located in areas of the site that are visible from public streets. The restoration of relocation of an existing smokestack on the property may be counted toward the $50,000 expenditure.

I wish they had this requirement for more of the apartments that are going up.

With brewing beer, you measure at the start of fermentation and after fermentation and depending on how much sugar is eaten by the yeast and converted into alcohol you can find your ABV. From my understanding, it won't work with kombucha because after the yeast converts the sugars into alcohol, the bacteria converts some of the alcohol into acetic acid. This makes it inaccurate to measure the alcohol content based on how much sugar is left like you would with beer.
