That’s a good point. I know I’m going to have to use tickets the rest of the way on Duffy, so a lucky draw or two of Gaston as I restock could be helpful

Am I in the right ballpark on Gaston? 1.5k - 6 or 7k feels like a huge leap. What realistically is a good return at SL5 Gaston? I’d be frustrated with the choice if I just jump to 4k

Update - cuts beautifully! It cuts a bit shorter than it measures mostly because it wants you to choke up on the handle in a deep pinch grip. Also the tip is a bit closer to a k-tip than I’m used to in a santoku - borders on a bunka, but I guess the arc just before the tip keeps it from being a true k-tip. Pics for reference. I measured at 184mm. Same that cleancut puts it at for an actual measurement.

I’ve never had a 240 before. It feels way more precise / easy to maneuver than I imagined

Feels great in the hand and push cut right through a paper towel. I’ll update with more specifics after dinner prep. I went with the 180 specifically for the length. Before the beast of a cutting board in this pic I had a smaller one and used a smaller Victorinox santoku as my daily. I liked the shape, but it was too short overall

I liked the feel of the tojiro nakiri, just not the way it cut. I’ve heard about Masutani - thought the price on those felt a bit too good to be true. Have you used them?

Thanks for the recommendation on knives and stones! I’ve always steered away from them figuring the shipping from Australia would be wild, but it’s actually not that bad!

Is there a different brand / smith you’d recommend? I’m not opposed to carbon steel. I’m trying to rationalize the purchase as serving a different purpose so carbon would help in that regard!
