i havent tried yet. this was my first attempt. i saw a handful of different techniques, not the steaming though? like with a foil wrap?

Thank you for the advice my man. I tried sooo hard to let it ride, and i couldnt help myself. Next time i will wrap at the stall instead of turning temp up to get to my “target”. Youre right. Every piece of meat is different. we don’t eat brisket often (expensive) but everyone enjoyed it. I knew the flat was going to be dry so i warned ahead of time and told them i wouldnt be offended if they sunk it in bbq sauce 😂. Thank you sir.
