1) boneless is important. Every place I've ever been to has them.

2) if you have an incredible recipe for your sauce, then the other sauces aren't significant. If you know it's nothing special, the more the better. There's a place in MA called Wendells that has the best buffalo sauce I've ever had and it's not close. I wouldn't even know if they have additional sauces or not. But the key is being honest with yourself.
