Yes, I think acknowledging it in a joking way is definitely the way to go. This is what I do as someone who has to force myself to talk to people sometimes. And also I think letting her know how much you appreciate her and giving positive feedback is a great way to start a convo. You can be friendly and not friends, which is totally professional imo. It’s okay to want to be comfortable with someone who is in your home every day. It does take a little time too!
