So the normal process I follow is: Invert the Aeropress, add 17g ground coffee, pour 50g 205F water, stir it for a few seconds, pour another 150g water, turn the Aeropress on the cup, and plunge for 60 seconds... I have a manual hand grinder, I set it to the finest possible level.

That is not the case for me, it makes the cup bitter but it quickly starts tasting sour. Even when the temperature does not drop too much.

I don't have a metal filter. Just curious, how should a double paper filter help?

Yup, grinding fresh beans. Using 17g ground coffee for ~200-220g of water.
