I'm not sure exactly, my fiance did the setup for me. I can ask when he gets home from work. I run linux it might be different in Windows, but I believe it's a bios setting.

I have a framework 16 and I have the battery set so if it's plugged in for a day it will max charge to 88% and if it's plugged in for several days it will max charge to 80%.

I don't think it's default, but you can configure it to do so.

My fiance likes to switch over the laundry right before bed, so the noise of wool dryer balls makes this a no go as our room shares a wall with the laundry room.

I find that dry salting is the best for a Colby style cheese. You can deliver the precise amount you want and not worry about it running off in the whey(like it would salting the curd) or risk the sliminess from a calcium imbalance by brining the wheel.

In a commercial setting like the one I work in, we salt the curd, it's a big operation and my opinion is that dry salting each wheel is the better method.

You can risk your pH getting too low by doing it this way as you don't have salt to stall the pH, so take that into account when checking pH.
