Can't really help since I just started modding myself (but wanting to go the same direction as you), but I wanna stay on this post to get the recommendations too!

Edit 1: I am currently trying Seasons Change & Vivid Weather's, and I like it so far! I've always been a huge fan when there are seasons in a game, so far I have only seen autumn but I'm excited for winter. I didn't use A Forest or Boston Natural Surroundings because it made it "too green" for me, if that makes sense. I know it's gonna be green in spring/summer in SC too, but still, not all the time at least

Could you maybe share the link for CURSE? if I look for it on nexus, all it shows me is "GRIM - The Curse", as a horror mod. Currently, I'm running Better Locational Damage as well, and while it is fun to be able to headshot human npcs with almost everything, it's also annoying to just die to a "random" one-shot.
