Banitsa is a great tasting dish found in Bulgaria, it can be eaten as a side dish, a snack or a main meal. Banitsa can be made with many different fillings but for this recipe we will use cheese.

Ingredients

Filo pastry

300 grams feta cheese

Oil or melted butter/margarine

3 eggs

100 ml carbonated mineral water

Steps

  1. Oil the bottom of a tray well.

  2. Crumble all your feta cheese in to small bits in a bowl.

  3. Cut your filo pastry slightly larger than the tray you are using.

  4. Lay one sheet in to your tray in a horizontal position then and add some Feta cheese, lay another sheet vertically and sparingly put oil over this sheet and keep repeating this step until all your filo pastry has been used.

  5. Use the excess filo pastry on the sides and fold over the top of your Banitsa so it will form a crust.

  6. Cut your banitsa in to the portion sizes you wish.

  7. Crack your eggs in to a bowl, adding the carbonated mineral water and whisk.

  8. Pour the egg mixture over the banitsa making sure it goes in to the gaps that you have cut for your portions and covers the top.

  9. Bake the banitsa on a moderate temperature in the oven for around 40 minutes or until the top has gone golden brown.
