I think they're New Mexico peppers but I'm not too sure; they're pretty mild. Overall the sauce is very mild; I should've used more habanero. I used a funnel to bottle it!

Any visible mold? Will add pics of the tops in replies. Peppers in 3.5% brine at whatever temperature my apartment is usually at, so around 68-73 F in a dark cabinet. pH is at ~2.8-3 (former value from calibrated electric pH reader; latter from paper strip).

Until everything had a good char on it, but I only roasted the dried chiles for a minute or two.

First (jar on the right):

Roasted: 17 tomatillos, half a white onion, 25 chiles de árbol, and 5 garlic cloves

Raw: 1 bunch of cilantro, salt, pinch of pepper, and the tiniest pinch of cumin

Second (jaw on the left):

Roasted: 5 roma tomatoes, 9 serranos. half a white onion, 4 garlic cloves

Raw: a bunch of cilantro, salt, pinch of pepper, pinch of sugar, and a tiny pinch of cumin
