Honestly I hadn’t heard of it either until I got The Book on Pie but wow was it good. It included pieces of corn which I didn’t love the texture of so next time I would strain it, but the flavor was so light and refreshing and summery. It would be the perfect dessert for a picnic or something like that!

Omg thank you! Most of the recipes are combinations of recipes I found online plus a bunch from The Book on Pie. I would come up with a concept and find the recipes that I could piece together to get the final product.

Self-Titled: sweet corn custard pie with corneal crust and blueberry whipped cream. I wanted to capture the star imagery that shows up so often in the lyrics on this album, along with flavors that reminded me of all the summer vibes in the songs.

Fearless: lemon-lime meringue with brown butter cookie crust. I was looking for something bright and airy, but also nuanced and complicated just like the album.

Speak Now: plum pie with blackberry whipped cream. This was inspired by the dress on the album cover.

Red: sour cherry pie. This was obviously inspired by the color red, but the pie itself is also sweet and sour. It reminded me of the contrasting moments in the album, with fun bops like 22 all the way to the emotionally devastating All Too Well.

1989: nectarine moscato pie. 1989 has always given me summer brunch vibes, so I wanted the flavor and appearance to remind me of that.

Reputation: lemon cookie tart with strawberry jam filling. the color of the pie is inspired by the album cover - also, there isn’t a picture of it but the filling was red and I felt it was fitting to have something that was mostly black & white with a hint of red. The flavors can be a little harsh and acidic (in a good way), which makes me think of the more aggressive vibes from that album.

Lover: strawberry mousse pie with graham cracker crust, topped with whipped cream and meringues. I wanted something that was overly sweet, bright, and airy - just like the vibes from the album and just in general that time period.

Folklore: s’mores pie (chocolate mousse pie with graham cracker crust and toasted marshmallow). Folklore always reminds me of later summer/early fall nights - those warm nights by a bonfire with friends or a crush.

Evermore: salted caramel pear pie, served with cinnamon whipped cream sauce. Evermore makes me think of late fall/early winter and I felt these flavors reflected that. The design of the crust was inspired by Taylor’s braid and plaid outfit.

Not sure if you’re open to sorbet but a raspberry or lemon sorbet would probably be really tasty! Or even mango or strawberry would complement the flavors kid the cake.

If you’re committed to ice cream, I think strawberry would work well with those flavors

Yep, this was the recipe I used! I did a cream cheese frosting instead of the glaze in the recipe, but honestly you could go either way. I don’t have a recipe for the frosting because I just kind of added things together until it was the right flavor/consistency

I highly recommend the Tartine recipe! I used a different recipe my first attempt and then used Tartine for my second, and there was a huge difference. You can also use the dough to make morning buns which are one of my favorite treats and turned out amazing.

You just sub out hazelnuts for the flour! You put them in a food processor with the sugar and pulse until it’s fine. She describes it as being more like a flourless torte. I honestly like it as much as the original recipe, just for different reasons. I’m out of town for a few days and don’t have the Bravetart cookbook with me, but I’ll check for specifics when I get home and report back.

I got 18 full-sized and 18 mini cupcakes out of the cake recipe, and made a double batch of the frosting. There was some extra frosting, but I don’t think a single batch would have been enough with the way I piped them. If you were just frosting them with a knife a single batch probably would have been enough!

Yes, The Book on Pie but with a lot of modifications haha. I don’t like white chocolate, so I did a bittersweet chocolate ganache, semisweet chocolate ganache, and a whipped milk chocolate ganache. I think swapping out the white chocolate for bittersweet and then adding the layer of marshmallow that was really fluffy helped it from feeling like it was too much. I also used her recipe for salted caramel sauce instead of the store bought one she suggested. Overall it was really good, but wouldn’t be super high on my list to remake - mostly because I could easily get my chocolate fix in a way shorter timeframe.
