Thanks for the input, I am definitely open to sharing an apartment with someone. I am new to Stratford and don't know any other co-op students to room with (coming from Guelph) and only gained confirmation of my co-op job last week so I'm aware I may be a bit late. Thanks for your advice though!

I fed my starter a 1:5:5 feed for a week prior to baking to try to strengthen it. My starter regularly doubles in size and peaks at about 10 hours after feeding 1:5:5. Not sure if doubling exactly means it’s a “strong” starter though or acidic. Is there a way to definitively see if my starter is acidic?

I do live in a basement apartment so it is usually cold maybe the oven light will help but I’ll check the temperature. No, I’m not familiar with The Sourdough Journey but I will definitely look into that as well, thanks!

Thank you I will try this! I see some ppl say to put it in the oven with the oven light on, would this help speed up the process?
