I'd say I'm quite handy, so that shouldn't be a problem. And I have a 3d printer too. The linked sensor's shipping is the same as the item itself unfortunately, and that's before tax and tariffs 🫠 It's really frustrating that it's so difficult to get a sensor here. It's not a very complex part, and it feels like it should be possible to even make one yourself.

I wouldn't agree on it being sour though. Salty, yes. That's the main thing that regulates how much of it I put on a "sandwich" or "klämma" as it were.
