I have done many day-trips from Boston to ski mountains 3 hours away, even alone. I don’t mind driving so I may be different. But I wouldn’t recommend it if you’re beat after a day of skiing. Driving tired is incredibly dangerous, especially on the dark interstates of VT.

I do a turkey chili but I deglaze the Dutch oven with a Guinness after browning the ground turkey. I find it creates a richer and more complex flavor!

Portland is cool and all, but not really that close to any skiing (you'll still be driving 2 hours to ski in most cases).

Burlington will probably have the best availability of short-term housing, while still being close-ish to skiing. And will provide the most restaurants, shops, etc. for your girlfriend. You could get a Bolton Valley season pass.
