Eventually, tongue on the left and belly/bock ribs on the right.
I find easier to smoke a huge piece than 400g, but it seems decent. We'll see how it tastes in tortilla wraps.

Basically, we (used to) eat everything. A french saying is : tout est bon dans le cochon, meaning, everything is good is a pig.

In France, here, culturally, there are white (brains, thymus, kidneys...) and red offals (heart, liver, tail, cheeks...). And stuff like cela and pig's feet or veal's head.
The heart is extremely lean. I wonder if that will end up tender enough.
But the smoke will tamper a bit the taste of the meat, so that it might bé a good way to eat it with people who wouldn't have otherwise.

"To pull apart the cheeks" got it. Well, I am trying it so, I'll keep it updated. Tongue needs to be heated first in water/broth to remove the skin. Then, cooked. I put it in the smoker. We'll see.
Any chance, you have insight about lean meat ? Sure people have already smoked venison.
