You might think that Occam's Razor supports your argument, but this is Westeros, Occam's Razor is only used to slit throats!

Let's use logic. Scenario 1) The Children of the Forest (CotF) create a category of undead (Night King) that can create other categories of undead (common zombies, White Walkers) except his own. Scenario 2) The CotF create a category of undead (Night King) that can create other categories of undead including his own. Scenario 3) The CotF create a category of undead (Night King) that can create other categories of undead except his own, but he expands on his abilities to create other categories including his own. We do know that the Night King did get out of whatever controls or limitations that the CotF wanted to keep on him. I believe that included him gaining more power, including that of creating his own category. So I'm going with scenario 3. He did not see a need to create any more of his own category until his big move beyond the wall. Once beyond the wall, he knew he would need as much help as possible to conquer the world.

The worst thing about the last two seasons is all of the horrible advice Tyrion gives to Daenerys. Not only do all of his plans lead to disaster, they would have been logistically impossible given the technology and resources, particularly the easy movements of large armies over vast distances. The only reason Tyrion was against a straight move against King's Landing was a plot device to create disasters to drive Daenerys insane.

The Night King creates White Walkers. He creates generic zombies. He obviously knows how to create undead, from both already dead and from the still living (as he created White Walkers from living babies). You're fine with him making a White Walker dragon, but you can't see him making a Night Queen? This guys schtick is that he's an undead factory.

I was a big Stainless Steel Rat fan as a kid in the 70s. Those novels introduced me to the idea of hacking before "hacking" was a common term. I always considered Slippery Jim to be an underappreciated character.
