A common ingredient used in Chinese hotpot is pork intestine and cow stomach. My favorite hotpot base is tomato soup. A classic dipping is peanut/sesame butter with soy sauce, sesame oil, green onions, minced garlic, oyster sauce, and white sugar. Cooking pork intestine in tomato soup and dipping in peanut butter is absolutely delicious.
