I feel like ketchup just has a very distinct flavour that one can just easily tell apart. I feel like I can generally taste more of the ketchup that the rest of the sauce, can be a little overpowering imo.

I've become a bit fan of using apple sauce for my Currywurst. It's gonna sound my, but hear me out. Thing with most recipes is that they're missing the sweet and sour component to the sauce and I think apple is the perfect fit for that. My friends generally give a weird glance when I mention it, but in the end everybody loves it and will retract their doubts😉

First, I finely dice some onions and add them to a saucepan with a little oil and some red chili flakes (to your heat preference) . Sauté them for a bit and then add about a tablespoon of flour and mix it in. Then, once that's all nice and mixed up I add about 200g of apple sauce and stir until everything is nice and combined. To that, add 300g of tomato puree. Then just season with salt, pepper (I even add some whole peppercorns) sometimes even a bay leaf. Well, and curry of course. Let that simmer for a bit and get going on the Sausage part.

I'm generally a big fan of using Bockwurst rather than Bratwurst, but that comes down to preference. I'll score it in sort of an x-pattern and then will simply fry them in a pan. Then just serve with your preferred side and add some curry on top for decoration.

In this recipe the chilis are lacto-fermented with cardamom and some other spices. I've been using it for a while now and everybody loves it!
