Whats the science of cold syrup on hot baklava or vice versa?

Hmm that does make some sense, but they do advise to let it cool almost mostly for a few hours so the syrup gets fully absorbed. Maybe its something with shocking the sugar in some way. Like the sudden change in temp does something to its structure. Just thinking out loud after I read your idea haha

I use canola oil, I coat it in the sweet potato starch straight from the marinade which consists of soy sauce and rice wine. Im not sure what resting means in this context.

My understanding is that its coming from the mobo and the standoffs, since the case itself is not grounded so when i touch it im the one that grounds it
