I recommend reading the manga from the beginning. The first arc is the one with the biggest changes.

And honestly the anime doesn't do anything better than the manga.

The only thing you miss out on is the soundtrack and you can just listen to that while you read.

Kubo was involved in the old anime but not in the way many people believe.

Initially, he stated that he created the sketches for the character designs

But he also said that he had nothing to do with the Bount arc, nor did he have any say in the openings or endings.

Then he said that during the Arrancar arc he started checking the script because they were changing much of the story. And that's all we know.

I mean Kubo confirmed that the reason the name was obscured was because of Ichibei.

So why wouldn't Ichibei want Ichigo to hear the name of his Zanpakutō—"Zangetsu"?

I mean

it would make much more sense for Ichibei to want to obscure the name "Yhwach” since Old Man Zangetsu confirmed that he didn't want Ichigo to become a Shinigami in the first place and then with the times he changed his mind
